More Resolve than I thought I had

I also resolve to try out vegan eating. Because of a throat problem I have a lot of trouble swallowing certain foods (breads and meats being at the top of the list). Aside from the hatred I have for animal cruelty (though I don’t disapprove of the eating of animal meat, I do hate the way that animals are treated and the fact that they are ‘grown’ like crops only for the sake of slaughter- where animals are hunted ‘fairly’ for food I am not opposed, I know that sounds contradictory to a lot of people, but it’s not) this is a very good reason to try them out. It’s very embarassing to choke on your food several times a day. I have already eliminated meat from my breakfast and lunch almost completely, it will be nice to have meat-free days that give my family the meals they crave.

This isn’t to say ‘I’m going Vegan!’ but that I want to explore the ‘lifestyle’. It only dawned on me at dinner tonight that it would probably be a lot easier for me to swallow fake chicken than real chicken (vegetables rarely give me trouble).

I enjoy cooking, and I enjoy vegetables and beans. I’ll start with meals and work on desserts later.

I think this could be fun.

Fitness

After my son was delivered sugircally last year I felt helplessly weak. It's one thing to neglect yourself and know you can get back in shape when you want to- it's a different feeling to have your abdominal muscles cut and no longer know what you're capable of!

With persistent cramping in my legs I began with the first literal steps to getting back in shape- I began walking 100 miles. I reached 99.99 miles on February 09, 2010 and ceremoniously 'completed' my 100 miles with Kevin and our son on Valentine's Day.

I'm not sure what challenges I'm going to set in front of myself next, but this section will keep you updated!
